Chicken in Coconut Milk Soup
Khow Soi(Chiangmai Nooddle)
Cashew Nut Chicken
Thai chilli paste
1 cup Cooked sticky rice
1/2 cup Coconut cream
1 tbsp. Sugar
1/4 tsp. Salt
1 Ripe mango,peeled,halved stoned
How to cook:
1. Cooked sticky rice according to the recipe.
2. In the sauce pan,bring coconut cream,sugar,salt to boiled.
3. Lower down heat.and simmer till coconut reduced to half.
4. Pour mixture to sticky rice,fluff up rice with spoon or fork.Allowed rice to stand and cool.
5. Turn out in the mound on the serving platter.Arrange mangoes on side of sticky rice.Garnish with coconut cream and sprinkles mung bean on top of rice.
How to cook sticky rice:
8-10 cup Sticky rice
Normal water for streaming.
How? 1.Sock rice in water over night.
2.Use hand move in cycle to clean rice and gently drain water 2-3 times.
3.Gently place rice in streamer bowl.If rice is place too tightly,rice in middle will not cook.
4.Place streamer over boiled water and cover with lid for 10-15 minutes or until rice’s fluffy.
5.Take rice out from steamer and put in cover container.
